Christmas Chutney

(adapted slightly from Nigella’s Christmas)

  • 2 big cooking apples, peled, cored, chopped
  • one smallish onion, peeled and chopped
  • 100g of assorted dried figs and raisins
  • 200g fresh cranberries, to get them out the fridge before they run away
  • 150g caster sugar
  • 1/8 t ground cloves
  • 3/4 t ground ginger
  • 3/4 t ground cinnamon
  • 1/8 t cayenne pepper
  • 200ml white wine vinegar

Chop everything big/small so that it’s roughly the same size, ie about cranberry size.  Mix it all in a medium sized saucepan.  Bring it to the boil, simmer uncovered for an hour. Put it into sterilised jars.  It made about 4 jam-jars full.
